Isn't sanity and insanity just words society hands us in order to label those deemed by that very same society "strange", "unstable", and "not fit to be in public"???

In a way yes but in a way no. Not nessesarly labeling depending on how the words are used. Like the word "hell". Depending on how you use it determines wether if the word is a bad one or not. (Example: Hell no. [bad] The devil lives in hell. [good]) To have sanity is to not be crazy but to be insane or to have insanity then you are crazy.

Sanity and insane do not have the same meaning.

Sane-mentally healthy; free from mental disorder; "appears to be completely sane"

Sanity is a legal term denoting that an individual is of sound mind and therefore can bear legal responsibility for his or her actions. It is generally defined in terms of the absence of insanity. It is not a medical term, although the opinions of medical experts are often important in making a legal decision as to whether someone is sane or insane. It is also not the same concept as mental illness. (ie: not crazy)

Insane-afflicted with or characteristic of mental derangement; "was declared insane"; "insane laughter"

An obsolete term used colloquially to describe a person with a psychotic disorder. Now a legal term applied by the courts to a person who, because of mental disease or developmental disability, is unable to appreciate the wrongfulness or criminality of his or her conduct at the time of an offense, or in some jurisdictions, is unable to control his or her actions. (ie: crazy)

I think my favorite insane person is Hopkins, from the Dracula anything...

He was the guy who ate flies, spiders, and other small bugs, and was put away because Dracula was influencing him, and the doctors didn't know it...
